To diversify the output products and enhance the value of the Japanese purple sweet potato which is being grown popularly in the Mekong Delta, scientists from the Fruit and Vegetable Research Institute (Vietnam Academy of Agricultural Sciences) have succeeded in producing the anthocyanin-rich nutrition powder from Japanese purple sweet potato (through the implementation of the state-level project KC07.10/11-15).
Anthocyanin-rich nutrition powder with 5.1% humidity has ingredients as follows: Japanese purple sweet potato, rice, green bean, soybean, sesame, salt, sugar, and vitamins (C, B1, B2, B6, B12) and minerals (iron, zinc, calcium...). The powder helps supplement micronutrients and antioxidants (phenolic compounds, anthocyanins, carotenoids), prevent the growth of cancer cells, and enhance the anti-aging ability. It has received the high appreciation of VIFOCO Import - Export JSC (Bac Giang), and the two sides are negotiating cooperation to soon put the production technology into an industrial scale in the near future.
