The new process is implemented as follows: In the morning, the user will turn on the pump; the fish sauce system will go through the sauce heating system by solar energy, after that, the sauce’s temperature has increased up to optimal temperature. This process is ongoing, turn on in the morning, turn off in the evening , therefore the labor cost is also reduced because there is no need of sauce brewing labor. The process is almost automated. It also has heat source so the system is still working even in the cold rainy weather.
The most advantage of this technology compared to traditional method is reducing half of the fish sauce processing time. Besides, the solar panels can help skip the lid opening process, therefore the sauce is not evaporated, and the quality of fish sauce will be increased and less loss. According to calculation, the quantity of sauce is 30% higher than traditional method and is maximized metabolized by the optimal temperature. This process is very clean and does not pollution the environment. Another advantage is the automated process lead to the less direct impact from the rudimentary tools such as shovels, bucket etc so the food safety and hygiene is also more guaranteed
